    Tofu ice cream for dessert. I doubt that will motivate anyone.

    On a serious note: my wife and I switched to a low carb diet and reduced our meat intake to the occasional chicken meat or fatty fish (for the Omega-3 fats). We each lost about 20 pounds in 2 months and haven’t felt this good in ages. We don’t get any fast food anymore and cook more. We have found so many easy and delicious recipes that are mostly vegan. We are eating better and more delicious foods than ever before. Our teenage daughter has joined us and loves the food as well. She is into Asian food and also likes to cook. She has made some dishes with tofu that were really very good.

    The past two days we made a broccoli mash and a cauliflower mash as replacements for mashed potatoes. Honestly, they were so good that we not only don’t miss the potatoes, we probably will never make mashed potatoes again.

    For anyone that is interested: The cauliflower mash is very quick and easy to make:

    - Clean the cauliflower and cut it into bite sized pieces.

    - In a pot, melt about 1 large tablespoon of butter (or use olive oil as a vegan version).

    - Simmer the cauliflower on medium heat for about 2 minutes.

    - Add some salt and nutmeg (or curry for more flavour) and about 5 ounces of cream (or a vegan substitute).

    - Cook on low to medium heat about 12 minutes with the lid on, stirring occasionally.

    - Use a baton mixer to puree it all. Done.

    My ex used to make a lasagna in which she substituted tofu for meat. It was impossible to tell the difference and de-lish!

    I am with the kids tofu is not something I would eat and certainly put it in my lasagna….my Italian family would kill me…

    I like tofu in stir-fries, but I’ve found it doesn’t work well in leftovers, as it gets soft and unappealing.

    I had a meal once in a Chinese monastery where the monks specialized in making tofu dishes that imitated various types of meats. It was so good, and I have yet to find anyone who can surpass that meal.

    Tofu is pronounced correctly but spelled incorrectly. It is made from the foo between your toes.

    I’m confused – are the kids voting for what they want? If so I find it hard to believe that any of them would vote for a tofu product. Are they just trying to guess what they are eating? I wonder if this is based on an old TV reality show and I just don’t get the joke of the era.
