In my mother’s house, there was ALWAYS dessert after dinner (the large meal at the end of the day – whatever term you use) until she passed in her 80’s. And my siblings and myself all grew up skinny.
My Dad worked for threshers, when he was young, (old farmers will remember). threshers were usually fed at the farmstead where they were working. He told me about an old German family that served dessert first, Dad didn’t know this. The dessert was strawberry shortcake,(our family would make a meal out of just this treat). He ate heartily, then nearly fainted when the rest of the meal arrived! Dad was seventeen and Uncle Elwood was fifteen, the boys didn’t know any better, but he said it was the best shortcake he’d ever had! This would have been about 1924.

My wife had two uncles who, at reunion picnics, always ate pie and ice cream first. Other foods, of less importance to them, were saved for later.
