In an experience I had with a Chef, it seems that what the diner thinks as “medium” is half done. The Chef thinks it should be almost raw. I hope Chefs out there don’t take offense.
I remember once when I was in a very upscale restaurant in Thailand and I ordered steak “towards well done.” I was told that in no uncertain terms that the chef did not do well-done. So I had seafood instead, which by the way was muy, muy, delicioso. You could select your seafood from a tank of live critters. I discovered that in the restaurants without snooty chefs I could get a “towards well done steak.”
