I was once told that Szechuan food is especially spicy because Szechuan Province is (or was) especially poor. Traders from Szechuan could generally only afford plain rice (no meat) when they traveled, so they carried little wooden fish with them. They’d put the fish on their rice and then load it up with spicy sauces (the plural for “spice” is inexplicably banned); when they went back on the road they put the wooden fish in their mouths and sucked out the flavor for hours afterwards.
(I don’t know if this is apocryphal, but it’s what I was told. I mean no disrespect.)
