I wonder if black olives were a substitute for an ingredient not available to the locals which then became a standard ingredient? Some of my greek relatives use cloves instead of the usual almonds in their butter cookies, Kourabiedes. Turns out at one time almonds weren’t available (WW1?) where they were located and they used cloves instead and that became the standard. The first time I tried one and bit into a clove I was like; “What the…?”
