Parsnips are excellent. Poncho should get a visit from the Parsnip Anti-Defamation Society.

Apparently, the best way to store parsnips is to leave them in the ground. Even into winter. I remember a farmer, when his wife wanted to make a stew in January, taking an iron bar out into the garden to pry them loose.
