Granddad: Thanksgiving's coming, boys. Should we have smoked turkey or fried turkey?

I smoked a turkey one t-day, years ago. It was a big turkey and it took a long time to do it right. Crowd was NOT happy about waiting for it, even though I started really early. However, once they had it, they declared it was the best turkey they ever had. Still my favorite.
I brine mine. Use one from Williams Sonoma, an apple-spice brine mix. It uses water and apple cider and makes for a really great gravy. Use some turkey stock as well as water for the gravy.

Tried frying a Turkey but could only brown one side at a time as the skillet was too small! 8^()

Fried is cool. Had that a few times. Neophytes gotta watch the fire and don’t put too much oil.
