It’s not the actual food ingredients that has me worried as much as all the chemicals that they add along with it.
my favorite food additive is xanthan gum.
The biggest whopper is when they tell you there’s nothing wrong with eating them…

Seems reasonable. You feed a fungus (yeast) sugar, you get alcohol and Carbon Dioxide.
You feed a bacteria sugar, you get a gelling agent.
