I had a great cook for a mother when I was a kid, but she made horrible salad (The days before pre-packaged?)
Basically, a warm, soggy mess. While I still enjoy eating all the ingredients of a salad separately, I’m not much of a salad eater all these years later. I still miss her cooking, but NOT her salads.
Husky51 has the right idea, yeah - but do it with fresh sliced mushrooms; ones you slice yourself, if possible.

Chop up one large green pepper, one medium sweet (real Vidalia, if possible) onion and eight ounces of mushrooms.
Get the skillet nice and hot. Toss in 1-1/2 pounds of Italian sausage cut in pieces (12 oz of hot, 12 oz of mild works well). Brown well, set aside. Add some butter to the sausages drippings in the skillet. Toss in the peppers and a couple cloves of minced or crushed garlic.
Saute over high or medium-high heat (don’t scorch the butter) till the peppers are about half-cokked, add the onion. Continue cooking.
When the onions are mostly done, add the mushrooms. Saute for a bit, stir till well mixed, turn down heat slightly and allow to simmer till the mushrooms are beinning to be cooked.
Toss the whole wretched mess (and the sausage) into one large or two medium jars of Ragu (or similar) sauce mix. {I generally use one jar of the parmesan-and-romano flavoured and one of some other flavour.}
Bring to a boil over medium-high heat, cover, reduce heat and simmer for a half-hour.
Serve over your favourite pasta. {I generally use ether medium shell or rotini tricolore…)
What is with the ranch dressing craze of the last 20-30 years. Everything is ranch!! I hate ranch! I don’t want to deny anyone their ranch, but must everything have ranch dressing in one way or ‘tuther? Just getting that off the chest….next week…hot wings. Yeouch!
