A good piece of steak doesn’t need sauce of any kind or even salt. The flavor of the meat stands alone. You don’t need to cook it to charcoal to enjoy that flavor - medium rare is perfect.
I like my steak very rare and no steak sauce or any other kind please. As for well done…I’ll re-sole my shoes with it. BTW, Clovia’s steak is probably done alla pizziola. It’s common on Italian menus.
You’re probably right stonehenge. But when you order a steak like that though, shouldn’t it come the way the Chef thinks it should be cooked? Would she even get a choice?

I took too many microbiology and parasitology classes at A&M to be comfortable eating any rare/medium meats. I can do light pink, not bleeding now, but for a long time it was well done thank you.
Bistecca alla Fiorentina is a delicacy of the Tuscany region of Italy (around Florence). It’s essentially a very thick porterhouse, charred on the outside and cooked rare. The way Clovia ordered it would just confuse Tuscans. Jim Scancarelli is the son of an archivist for the Italian consulate, so his background may figure into the response.

I never use steak sauce, to me it’s a contradiction. I don’t notice anyone using it except in those really stupid ‘A-1’ commercials.

You could put any of several steak sauces on the cardboard from McFreindly’s and get it down…
