    Ah, but everyone knows the best apples for apple pies are the tart Granny Smiths! (although the Cortland would probably be pretty tasty too.)

    The best apple pies have at least two kinds of apples in them, if not more. My last pie had SIX varieties and it was awesome!

    The best pie apples are Rhode Island Greenings, but they are almost impossible to find, since Granny Smiths have taken over their niche.Staymans and Romes are good, too. So are Galas and Fujis, I think Eric has got it right, a mix of different varieties make an excellent pie… Some hard, tart apples like Grannys, mixed with something sweeter: Macs or Fujis.with cinnamon… no other spices.Sometimes, for fun, throw in a handful of blueberries…yum!

    apple pie a la mode. nuke the pie and heap two big scoops of icecream on top. Eat the icecream and dump the pies.
