does anyone remember Justin Wilson? He was a Cajun cook on PBS & died many years ago. He too wore RED suspenders and a belt. He said he felt ‘safe’ doing that. Guess only a man would understand I guess.

I can never add the trinity to my dishes ( onion,garlic,peppers) without thinking of ole Justin’s " We got to add the oonnjun!" Someone told me he wasn’t even Cajun. No matter, I learned more about Southern cooking from him than I ever did from Emril, Paul or Paula.I gaurantee!
