yes beef tongue has an odd texture to it. Never got entirely used to eating it when I was growing up and now fortunately I haven’t eaten it in years.
My neighbor cooked up some and thought she was being nice. When she left, I offered some to my dog. She looked at it, sniffed, looked at me, and walked away. Wouldn’t touch it. Neither would I.
Tongue has almost no fat, hence, no flavor. Skin it and grill it, then put it on the plate and baste in with herb butter. Damn fine eating.
My mother was a master chef when preparing the beef tongue stew. Never taste anything similar since she passed..
Years ago I had some smoked beef tongue and as I recall it tasted a little like ham!
