    There are numerous acceptable ways to cook the books. A favorite is as follows: Cut the books into booklets. Rinse each and pat dry. Dredge the booklets in flour seasoned with salt and pepper; then dip each in beaten egg. Fry each piece until just tender in a bit of neutral oil. Serve with a tangy dipping sauce, kimchi, and rice. (Yes, I know that this has become more difficult in an age of electronic record-keeping.)
