The Hasmonean added a second Sukkot to boast about how great they thought they were. The rabbis hated the Hasmoneans (which explains the differences between the Hebrew Scriptures and the Christian Old Testament prior to Martin Luther – but that’s another story) but couldn’t get rid of a popular holiday. So eventually they created a story of the miracle of the oil to raise up God in the story and undermine the fanatics who slaughtered more Jews than Greek soldiers. (And let’s not forget the unarmed civilians killed and whose property was looted. All of which the rabbis were familiar with – see fact they didn’t like the Hasmoneans.)
