Once my mother died, no one wanted all that fuss. Not my sister in law nor me. We all made our new tradition going out to eat and then we’d come home and celebrate with all the goodies (that we made or bought), drink a little, and have a good time. It’s a good tradition!
I go to my brother’s but I make the dressing and other stuff. Then, in the evening I go to a friend’s and bring stuff too. I start cooking on the previous Saturday and do an item or two each day.
When my wife and I prepare a Thanksgiving meal, it is a joint endeavor. Te only time I didn’t participate much, I had just had knee surgery and couldn’t stand for long, so I sat and chopped stuff.
I’m totally fine without a fuss. You can be thankful with just Mac N Cheese, sitting at home all by myself! No family bickering, no politics, no major cooking or cleaning. My wife on the other hand, wants to have the big family dinner, so I often just sit at home by myself, while she goes to her family’s get together.

I bet there are hundreds of thousands who eat something other than turkey. In many areas, ham is favorite.
There are over a million Americans who report they eat no animal products.
