I like fried calamari legs but the bar that served them generally had the body rings less than crispy (not my taste). My last evening in Chicago we each had a plate of lovely Oysters Rockefeller as part of our meal. I made them frequently when I lived there.
I would not like soft squid. Onions or shallots are sweet when carmelized (as are other vegetables like cabbage). My best total meals are usually best made at home- such fun cooking together with my BF again.

Calamari sounds much better than squid. ;-)

Favorite squid I ever had was when I stuffed bodies with the chopped tentacles, herbs, garlic, and bread crumbs and sauteed them in olive oil.

I’m familiar with caramelized onions and plum tomatoes, but caramel-encrusted onions and plum potatoes are new to me.

I don’t mind food that sticks to my ribs; but I won’t eat anything that’ll stick to my esophagus on the way down.
