There are people who have consciously revived and practice Roman polytheistic religion, which, if you’re going to have a religion, at least sounds like a fun and creative way to have one. I’m not sure if they practice animal sacrifice, however; I think getting a permit to cut the throat of a cow during a religious ceremony would be rather hard in most places.
