In Japan, tofu is tofu. It’s not imitation anything. It’s just tofu. Top with horseradish and chopped chives, a dash of soy sauce (not too much) and serve.
My step-mother was Seventh Day Adventist and they had a no meet policy. They had a “meat substitute” that tasted like *******. Where I say anything I’d get in trouble.
Tofu is a lifesaver if you have a family member who is allergic to milk. Mashed silken tofu is a perfect substitute for ricotta in lasagna, among other uses. I used to sprinkle it with a tiny bit of sugar and Middle Kiddle ate it for cottage cheese.
I like tofu, one stir fry restaurant I frequent does a fine job with it being sautéed with my favorite veggies… and chicken! If it’s tasty I eat it but not instead of for me.
I have been asking this for ages! WHY? You’re vegetarian/vegan for a reason. It’s a bit hypocritical, kind of like only being a vegan during the week and an omnivore on weekends!
I have often wondered (never aloud), why it is that my vegetarian and vegan friends’ children miss so much school and have so many health and behavior problems. It can’t all be ‘the sugar’ (although that is what the parents’ claim).
Once you’ve tasted tofu, you stop wondering. I once made a tofu cake for a bunch of vegetarians. Everyone told me how wonderful it was … nobody asked for a second piece. :)
And now they’ve come up with “Beyond Burgers,” which even (supposedly) ooze red stuff when you cook them…never mind, I’ll stick with regular old cannibal burgers, thank you very much! (“New meatier taste”? wotthe…)
One of the local burger chains here has a “black bean chipotle burger” that I find is really quite tasty. They also serve a bacon cheese burger that is also quite good. I’ve been known to get one of each. I wouldn’t want to live off one or the other though. If I want plant, I’ll eat plant. If I want meat, I’ll eat meat. Not some plant made to taste like meat. I mean if you are opposed to eating meat, why do you want your plant to taste LIKE it?

I have a cookbook with over 1000 vegetarian and vegan recipes. Not one has fake meat in it and most don’t have tofu or TVP.

I like tofu best when it tastes like garlic or other seasonings, not like meat.
