Most pluggers are too old to do athletic type stunts like you see in the movies. Even riding a saddled horse, which I did years ago, can be hard on the butt if the horse is trotting and possibly scary if the horse is going at a full gallop.
A plugger is more likely to just do slow walking on a horse. My parents did that in their 60s and 70s while renting a pair of horses on a nearby farm. I did some of that too, which was fun. The farm owners would use their own horses for fox hunting.
Some stars did and do their own stunts, if they’re allowed. Burt Reynolds back in the day, and ended up injury-laden and in pain the rest of his life. And Tom Cruise does some ridiculously dangerous stunts still. Dude is cray-cray!
I was a new rider riding in a group on retired race horses. One idiot started yelling go, go, go. My horse took off at a gallop and I hadn’t learned gallop on an English saddle. I ended up on one side of the horse with one foot in a stirrup pulling on the reins with all my might. Horse stopped before I fell off.

Bought myself a tee-shirt that said, “I do my own stunts.” The only people who were impressed were the grandkids so, not a wasted effort.
