Cambozola rules—brie + blue. The stronger blues, like Roquefort and Gorgonzola and Stilton are wonderful, too,

(I wasn’t aware of the “mould monoculture” crisis—have to check on that.)

In the great Britcom Chef!, the titular Chef is searching for the perfect end to a perfect meal—an unpasturized Stilton. I haven’t been able to find the exact quote where the Chef proclaims that it’s a small matter if a few people die of listeria as long as they get that great taste, but I was able to find another quote from that episode:

“That’s what cheese is – gone-off milk with bugs and mold! That’s why it tastes so good! Look, cows and bugs together have a good deal going down. Why can’t people grasp this?”
