Re the kimchi, money well spent. It’s just one more food I can’t go without. Or at least my mood starts a downward spiral if I’m deprived of it for too long.
As for making it space worthy, there are several problems. First, kimchi is a fermented food that contains living organisms that are harmless on earth, but no oneand s knows what they might mutate into when exposed to cosmic radiation. They might stretch, or burn, or become invisible, or just look ugly. Wouldn’t that be fantastic?
Also, because kimchi is alive, a dehydrated version even after rehydration would not be kimchi. As the national dish and a major obsession in Korea, that would be an abomination.
And kimchi when opened has a pungent odor that some love and some hate but which lingers in any enclosed space… like the break room, your office, or a space station.
Plus, it sizzles and fizzes and produces gas which can pressurize the container it is in… and is capable of “exploding” and shattering its container.
I love it. I make it. I just picked up a new batch of Korean peppers to make some more.
