Between 2008 – 2012 there were only 90 cases of trichinosis in the US, and only 10 of those were from commercially raised and processed pork. Be very careful to always choose, handle, and cook meats properly but this is a great proof of why regulation of industry pays off big time. You’re far more likely to get trichinosis from game meat. And yes, there probably were in diagnosed cases but most of those were more probably related to game meats than meats from regulated industries. Watchdogs and whistle blowers are a good idea.
But skip both pork (and especially the poultry) tartare anyway.
