Is that Liver, and Eggplant casserole? Or, Liver & Eggplant Casserole? If it is liver plus Eggplant Casserole then let’s eat. Not sure I would want the liver mixed into the Eggplant and then baked as a casserole.
My mom’s fried liver was that one could pound nails with it that put me way off of it, but then I tried it in a restaurant [because after donating blood] I found that with onions and not overcooked it was ok.
The only liver I ever ate and actually enjoyed was about 40 years ago. My wife cooked a box of frozen chicken livers as if she were making peppered steak. I think it was likely served with noodles.

Liver is one of the meats that doesn’t taste good at all as a leftover. Now, I have no experience with eggplant, much less as a casserole.
