    I love ’em. Kumaras are plentiful here in my area of Ecuador and can be prepared several different ways and served hot or cold.

    Kumara is the Peruvian name for the purple sweet potato and is in common usage here, where I live, to distinguish it from the Camote – the common sweet potato

    Orange-fleshed sweet potatoes contain more beta-carotene, which your body can turn into vitamin A. The purple varieties contain the most antioxidants.
