@Rich Girse: It’s my understanding (from an article on the history of fighting internal parasites) that the introduction of the capsicum pepper to the Far East gave its people a whole new arsenal in the struggle, in addition to the hot stuff they already had. So maybe it works that way in the peppers’ native Americas too.

Capsaicin is like salt and MSG. It enhances and intensifies the flavor of the food it’s put on. The “burn” also acts as sensory enrichment, adding more than just taste and texture to the food. The more sensations that get involved with a food, the more appealing it is.

I endured a couple of years in Dallas, and developed a taste for Jalapenos. They are very addictive. Even Texas has some nice things.

Had the BK jalapeno burger. Finally a burger that even I say is hot.
And yes Ponytail, the stuff they use in arthritis creams is the same stuff that makes chilies hot. Yum!

I love spicy food. I even grow my own assortment of peppers, onions, garlic, and horseradish so I’m never out. :-)
