I had dinner with a friend this week in Chinatown, the eggplant at the next table looked so good we decided to have it even though he is slightly allergic to it. It was delicious.
Fried eggplant in olive oil with some parmasian cheese, yummy! Of course, all of this just hides the true taste of the eggplant which sucks! Very healthful, though.
Until I was 42, eggplant was on a very short list of foods that I knew I hated and therefore refused to eat. Then I gave it another shot (I think by accident, actually), and loved it. Now well-cooked eggplant is among my favorite foods. Andy should try Chinese eggplant – it doesn’t have seeds (or has very few), so it doesn’t have to be soaked to get rid of the bitter taste.

Ya know, if they had named chocolate cake eggplant instead, I bet no one would eat it either. The name is NOT enticing.

Eggplant, otherwise known as aubergine (would it taste better called that?) is yummy done right – and so is tofu.
