In texas you find it every sat & sun in resturauts and corner stores AKA barbacoa, cachete…it is like a good pot roast except more juice and fatty…plus if your looking for a bypass this IS the rout to take….mmmmm
Okay. So Baldo’s friend Cruz isn’t the only one who doesn’t like Tía Carmen’s lengua casserole. Baldo’s sister Gracie isn’t either.

I’ve had a lengua burrito one time; wasn’t bad (except for my madrastra when I told her that “lengua” is Spanish for “[beef] tongue”).
My mother was always buying the cheaper meat cuts when we were little. Once she bought beef heart. I think we coul dhave handled it if she hadn;t stuffed it so full of stuffing that it actually LOOKED like a heart.
@glenbeck - I wouldn’t eat menudo, hueveos de toro or chitlins. There has to be a line, and for me it starts with goetta and includes the above.
But I do get a craving every couple of years for braunschweiger. Go fig.
Cold, sliced beef tongue is great in a sandwich! And, my grandmother used to make a casserole with lamb tongues, rice and tomato sauce that I still have fond memories of.
Had a calf lick my hand once, and I just can’t eat tongue. Heart is fine, as is liver, But gizzards are like chewing rubber bands, and I imagine that cojones might be the same. Tripe doesn’t appeal to me, either.

We usually had it in a stew. For casserole, I’d think shepherd’s pie ought to work. With roasted chilis for that Tia twist.
