Those leftovers are usually gone to turkey enchiladas by New Years around our house.

What’s a turkey leftover ? Nothing is left by the time we get through. The bones even get used for a wonderful caldo de pavo. Anybody want to really go off your diet ?I’ve got a recipe for a fantastic turkey relleno casserole !

Have a Merry Christmas and a Joyous, Healthy and Prosperous New Year !

Turkey usually gets better for a few days afterward, so just imagine how good this one is.
