I learned from a baker, years ago, if your want to keep breads/baked goods over a long period of time – keep them in the freezer ( wrapped, so they won’t get freezer burn ) but NEVER put them in the refrigerator. Counter-intuitive as it sounds, a refrigerator, because of the ambient moisture,will make bread go stale faster than leaving it out in a breadbox.I keep my loaf of store bought bread in the freezer and take out the slices as needed. A couple of minutes to dethaw and it’s good to go and tastes great.
preservation by freezing: Remember the wooly mammoth. Before they discovered scientists paid quite well for reasonably intact mammoths, Siberian market hunters would feed the meat to their dogs. Quite intact after thousands of years – if you don’t mind eating elephant.
