“Chicken Marengo”. After the Battle of Marengo (in Italy) Napoleon’s chef had to scrounge the neighborhood for food, and threw together what became a “dish”.
I used to go to a deli/lunch spot that also did a small breakfast trade. A favorite was home fried potatoes with peppers, onions, and miscellaneous ends of deli meats from the day before. Always different, always delicious.
“The best baked beans” my wife’s Uncle Don had “ever had” were flavored with the last ounces of several different bottles of BBQ sauce, at our rehearsal dinner.
A former resident of the co-op I lived in in college would supply us with pizzas topped with whatever he swept off the prep counter at the end of his shift at Paul Revere Pizza (“Home of the Midnight Riders.”)

I hear that is how Chop Suey was created. A customer came in late and there was nothing much left and they mixed up a bunch of leftovers.
