I learned from a fire investigator’s textbook (from the public library, no less) that 25% of all restaurant fires are from careless disposal of grease or oil soaked materials; they spontaneously combust. It said the same problem does not exist with mineral oils, like car oil, just with plant and animal fats.
He’s right. These bistro’s depend usually on one chef/owner. Their specialty of the day and restricted menu have limited appeal. Dad should get a cigar humidified.
You never know how things are going to work out. Reminds me of a restaurant here in Detroit, the Roma Café. Back in the late 1800’s a woman ran the place as a boarding house and would cook meals for the residents. Her Italian cooking was so well regarded, it later became a restaurant and a Detroit icon.
