You didn’t hear about it because doctors thought it was a very rare childhood disease. Turns out it isn’t really rare and that the disease can activate at any age. Also, modern medicine is geared towards, “throw a pill at it and forget about it.” No medicine for CD, just a restricted diet. Consequently, no big seminars thrown by the pharmaceutical industries (or pamphlets or free samples) to bring it to the forefront of doctors’ minds. (I’m sure very few folks have a “House” experience when they go to the doctor. Six brilliant minds working ceaselessly to get to the root of your problem.)The average time for a correct diagnosis used to be 11 years. Thank God we’re hearing about gluten so folks finally can figure out what’s ailing them. And hey, “it’s a fad” guy, no one, and I mean, no one, will stick with a gluten free diet unless they feel significantly better eating that way. It’s expensive, it’s limiting, and it’s no fun at all to question not only the ingredients in a dish but how it was prepared.
I was recently listening to an old radio show from the 1940s or 50s, and a person said he’d ordered a sandwich on whole wheat bread, but instead they made it on gluten bread. I’ve never heard that term used before.

Most of the people who are on gluten free diets are just following a fad.

Actually, wheat hasn’t been GMO’d the way corn and soybeans have.
