First time I ever had a waiter grate fresh parmesan over my pasta, I was a little boy. I had no idea you were supposed to say anything. I was just engrossed watching the operation, and figured he was a grown up and knew what he was doing. Fortunately, mom recognized the situation and told me I had to tell him when to stop, so I did. Otherwise I would have been perfectly content to sit there while he grated an entire cheese. It’s a funny memory now.
In reality, you should be given a chance to taste the dish first, to see how much of a nutty, salty, parmesan flavor you would like to add to it. Once in awhile, the correct answer is no, thank you.
