I remember decades ago, when I was at MIT, a professor newly arrived from southern California marveling at the fact that come spring, the flesh that New Englanders bared wasn’t just white, but a fish-belly bluish white. I think he didn’t know that flesh could go that color.
I am of north Atlantic descent: Scottish, Norwegian, German, and either Welsh or English (one of the roads on my genealogical map has a scandalous cul de sac). A melanin factory I am not.
And I’ve always been puzzled by and a little jealous of chickens, whose thighs somehow have dark meat.
