    The product Seitan is pure gluten.

    Don’t ask for the gluten free version. They’ll sell you an empty box.

    You can buy bags of gluten. It’s used by bakers to improve the texture of some breads.

    Reminds me of the osteoporosis pandemic a while back. Several million people experienced it after being convinced by “research scientists” to avoid anything from cows, goats, etc. Dairy, containing calcium (the accused villain), was said to cause arthritis. Glad my relatives were talked out of it.

    Fyi, a number of the better-tasting meat alternatives that are gaining in popularity contain gluten – most of all seitan, which is essentially hydrated gluten. So the cashier should know exactly where to send broomie. Mathematically speaking, the number of people with allergies or other forms of intolerance is not really that much higher than it used to be. They just have better circumstances in which to grow up and be properly diagnosed. A hundred years ago, every family had a number of “sickly” children who would often not live past adulthood. So now that more can pass on their genes, their numbers will naturally continue to increase.
