Here is the south Appalachian Mountains, we enjoy some unusual foods. Never had toad stroganoff though. Here is one we do enjoy:
Real Southern Fried Brain(Chick Tales – The truth, the half-truth, and nothing like the truth)NOTE: This document may not be suitable for young ears, or the faint of heart.I was discussing with my friend the other day about our Southern delicacies. We talked about Real Southern Sweet Tea, fried chicken, eating at Southern buffets, and other mouthwatering things. As y’all know, I have researched the origins of these things, and written about them just for your gastrocomical pleasure. My friend reminded me of one that has become more popular in these here latter days. It’s called Southern Fried Brain, also more commonly called “brain-mash”. Now, I know you’ll want to know more about this delectable treat, and how a Real Southern Man prepares it.Some of y’all have probably never heard of it, but it is really an old Southern delicacy, closely related to Roadkill Casserole. …………….
(There is more to this than will fit here, but you get the idea.)
My kid brother’s favorite lunch was a from-a-box beef Stroganoff. On his birthday, he asked for green beef Stroganoff. As a loving older sister, I complied by dumping half a bottle of green food coloring in to the final product. He was thrilled.

A slight variation of that happens often to me. One just has to live with picky eaters. My parents learned to. And for many years now, so has my wife.
