    Sir Joseph William Bazalgette (1819-1991) was a civil engineer who created the sewerage system for central London, in response to the “Gret Stink” of 1858. Before that, the street gutters served as open sewers.

    “Night soil” is human excrement. In cities, “night soil men” would remove it from buildings and take it in horse drawn wagons out to the country, where they sold the “night soil” to farmers for use as fertilizer.

    Waste from horses was another huge problem. New York City’s sanitation department was originally formed to remove the mountains of manure that lined the sides of the city’s streets.
