    I have a half-ton of grated zucchini in my freezer. My sister-in-law gave it to me six years ago and I still don’t know what to do with it.

    I’ve never had a Zucchini anything. My mom and my grandmother both hated Zucchini so they never cooked anything with it.

    People forget two things:- the Italians started stuffing zucchini flowers as a way to prevent getting a a gazillion zucchinis - you don’t have to let them grow to maturity, pruning back it perfectly ok

    I actually make zucchini tacos! Cut the zucchini in half, scrape out the seeds to make a “boat” and roast it in the oven for 20 minutes. Then stuff it with your favorite taco fillings. Sooooo good! I think it’s better than traditional tortilla tacos. But that’s just me.

    I’ve got a receipe for zuccini

    1. Graciously accept from your neighbor the zucchini which he planted far too much than he’ll ever use and doesn’t know how to cook it.2. Peel the zucchini, making sure to save the peelings for your neighbor’s compost pile which he keeps to grow those big beautiful tomatoes which he uses to bribe you to take the zucchini3. Cut tine zucchini into 1-inch chunks and boil them in unsalted water until tender.4. Mash the zucchini as you would potatoes, but don’t add butter are cream. Allow to cool.5.Afte dark put the mashed zucchini on your neighbor’s compost pile.
