Not a vegetarian, but I do like to be careful of what I eat. I have cut way back on red meat, had a $12.00 burger the other day (Yum!) after not having had one for a while, and I told my wife, “God really knew what he was doing when he made beef.”
One time I tried making a vegetarian chili to accommodate my son’s girlfriend. I browned and spiced the meat separately, to be added later. No matter how I tweaked the spices in the veggie pot it just did not taste the same. It was alright, but lacking something. Browning everything in the beef fat had to be the secret, since the fat acts as a carrier for the flavors.
