Charcuterie is a French term for a branch of cooking devoted to prepared meat products, such as bacon, ham, sausage, terrines, galantines, ballotines, pâtés, and confit, primarily from pork. Charcuterie is part of the garde manger chef’s repertoire.
I’ve always had a difficult time discerning the difference. I think it has something to do with whether I’ve actually managed to get the collective to a dining area as opposed to my kitchen sink or if the display involves Velveeta Cheese.

Charcuterie is a fancy sounding word for “Oops! I forgot to slice the meats & cheeses and the guests are arriving.”
