I just read an article about a new flavor of ice cream: hotdog. It has pieces of caramelized hotdog in it, and the ice cream is flavored with buttered toasted bun.
Did a little googling on “destruction flavors” of ice cream. Of course it led me to weird flavors. Lobster. Yam. Miso. Corn on the Cob. Some of which I would like to try.
4 large egg yolks 1/2 cup sugar 1 cup whole milk 3/4 cup heavy whipping cream 1/2 stick Butter For Salmon 2 oz Salmon cooked with Dill in olive oil Lemon for zesting For Anchovy 2 oz can of anchovies
DirectionsWhisk together eggs and sugar until pale yellowIn a medium sauce pan add milk whipping cream and butter (Brown butter first for salmon flavor)heat on medium heat until bubbles form around edgeremove from heat and slowly drizzle mixture into egg sugar mixture while whisking constantly until fully combinedFor SalmonBreak apart cooked salmon and add salmon with a small amount of dill to custard mixtureadd 1 tsp lemon zestBlend using immersion blender (cool slightly if you will add this to standard blender or leave cap slightly loos to allow heat to escape)For AnchovyAdd anchovies to custard mixtureBlend using immersion blender (cool slightly if you will add this to standard blender or leave cap slightly loos to allow heat to escape)return blended fish mixture back to sauce pan on medium heatWhisking constantly until temperature reaches 185Remove from heat and cool to slightly below room temperatureadd mixture to ice cream maker following your ice cream makers instructions and enjoy
