(You’d think that, as Bub says, you’d want to dress things up – and habits die hard – butfrom experience what also happens is that you start to notice flavour differences that you didn’t before. In other words, bland ceases to be as bland – I guess it’s a bit like what wine buffs call “developing an educated palate”. I still love strong flavours, but I can also tell, and enjoy, say, the difference in flavour between two types of rice. The brain is a weird thing.)
