I don’t crave ice cream very often in the winter, but too often when I do, I find the husband has eaten it all and not told me to put it on the grocery list.
Been having ice cream cones for snack many nights. We are both Diabetics, but leave enough carbs to have a late night (5 am – we go to bed late) snack. Have found that a small scoop of ice cream with a light weight waffle cone gives us the lowest first glucose reading the next day of any snack we have tried – many mornings after same his glucose so low that he has to have something with carbs as he is not well (say – on the US glucose scale – in the 50s).
What I do NOT understand is a local fast food chain advertising COOL MINT MILKSHAKES. I mean, milkshakes, even this time of year, maybe, but cool mint?

i live in southern california and never really see snow. But I spent a year in Colorado at college and this happened to me all the time.

Take a couple of scoops of ice cream in a bowl and zap it in the microwave for about 20 seconds – makes it into great soft serve ice cream
You can add chocolate syrup or fudge or fruit or whatever you like.
Or put it on warm piece of pie or apple crisp or a warmed brownie or …
