I Googled “What to do with tough meat”. It had a collection of suggestions. Number one was pounding it (to death in this case). Salt was suggested as well as acidic soaks. I guess that means everything from oranges, tomatoes, pineapple, to kiwi. But the one I expect for sometime this week to show up is – “Give it some knife work”. But I am such a bad cook… I would have just slow cooked it until it is on the edge of unrecognizable.
