    I’m guessing sour dough. I stopped buying any bread that could stay on the counter 2 weeks and not get moldy. IMHO if mold won’t eat it, we probably shouldn’t eat it either. All those bags of sandwich bread can sit for weeks and nothing grows. Publix bakery for this house.

    230 gms starter, 400 gms 105* water, 600 gms bread flour, 20 gms salt. mix, 1 hour later, fold a couple times, one hour later fold a couple more times, one hour later. fold again, put in air tight container in fridge for a day or so…Bake day let rise to double, bake at 500* for 45 min. crack oven door, bake final 15 min at 425. Let cool if you can resist slicing into it….Slather with butter…you’ll never bother buying bread again.
