Very early in my life when I was giving up things for Lent I had the idea to give up moderation. I liked it so much that the next year I gave up Lent entirely. And when I moved out I left the church behind. Been happy ever since.
Veggie lasagne, pasta with tomato or mushroom sauce, frittata, grain bowl with edamame, corn, shredded carrots, eggplant Parmesan, baked potato with broccoli and sour cream, noodle bowl with baked tofu and veggies, …. So many good choices.
I like fish but as far as I’m concerned it’s meat. Like the old gag: Man in restaurant in the south looks at the specials board and sees, “Veggie of the day—Deep fried cheese.” He asks the waitress how cheese could be a vegetable. She says, “T’ain’t meat.”
Put the amount of rice each person will eat on to start cooking. Dice butternut squash, half an onion, and a clove of garlic. Toss with some olive oil in a microwave safe covered dish. Nuke for 5 minutes. Rinse and drain a can of black beans. The microwave and rice will be ready at the same time (at least when I do it). Add the beans and rice to the squash, mix well, salt, pepper, cumin, hot sauce, or other flavorings you like to taste. Nuke for 3 minutes and serve. Dinner in roughly 2o minutes.
Grew up Catholic with a Dad that didn’t like fish. Cheese olive and nut sandwiches and cheese and spaghetti (apparently the folks didn’t like macaroni either). Variety wasn’t big at our home. Don’t remember eggs being offered, but maybe with pancakes. Breakfast for dinner is always good. Thanks for the memories.
Lent at grade school pre-Vatican II meant fish sticks or macaroni and cheese on Friday and Wednesday. Supper was fish and chips or if we were feeling fancy, shrimp and chips, hot out of Magic Chef deep fryer!

Good Friday is Fish Day (the secret sign of Jesus Christ in early Christian days) for us Christians. – Delicious!
One of the highest holidays for Protestants here.
I’m Catholic, but the fish theme still applies.

Growing up, I remember “Groton Fish Sticks” were popular…today I want to vomit just thinking of that! LMAO
