My youngest kid was a very fussy eater (he takes after me). But once he started going out to eat with peers during college, his range expanded amazingly.
I always made sure there was one thing that they liked. They had to try everything else. If refused, it was “take it or leave it but there will be nothing else till the next meal”. No one died of starvation and all love trying new foods as adults. To each family their own.
My mom wanted me to eat the eggplant parmesan and no way. Finally after years I tried it and found I was an idiot for not doing so earlier. Now I try things first before rejecting them. Also I found that the way things were cooked was important. My mother boiled squash to death and I hated it. Went to friends’ for dinner and they served squash. I am not rude and I ate it. It was wonderful. Cooked beautifully.

My siblings and I learned to eat and like, eventually, what mom cooked. She cooked what my father liked.

Easy: my parents had one simple rule for dinner, try it. You don’t have to eat it, but you have to try it. And because of that, no fussy kids.
