The best use of Arugula? Treat it as an ingredient in a Watermelon and Feta salad. Just small cubes of melon, small bits of torn arugula, a squeeze of lime or lemon. Toss. Garnish with crumbles of the cheese sprinkled on top. That’s the basics. There are literally dozens of variations of the simple recipe… widely offered online. I like to sprinkle mine with taijin for a peppery savor.
