To quote what appears to be an honest food encyclopedia (on nutritional value, they give a lot of definitions, explanation and history prior to this):
“Both butter and lard are high in saturated fat, which most experts agree should be consumed in moderation alongside a range of unsaturated, plant-based fats. A tablespoon of butter is about 100 calories, and represents about 36 percent of the current recommended guidelines for saturated fat intake. Butter, especially grassfed, is high in Vitamins A and E. A tablespoon of lard, in comparison, is about 115 calories, but is only about 25 percent of your daily saturated fat intake. Lard is also lower in cholesterol than butter, but doesn’t contain Vitamins A and E.”
Grandma always used lard in her pie crusts. They were great.
Once, at a living history ranch in Boulder, Colorado, I got to sample an apple cobbler made with lard. It was absolutely the best Apple cobbler I ever had.

My mother preferred rendered pork fat, usually found at supermarkets where they cut their own meat, over commercial lard.=
